The cooking classes

Our cooking classes begin at approximately 10.00 a.m. and are generally about 3/4 hours long and include the preparation of a multi-course meal, which you enjoy with wine at the end of the lesson. The Umbrian cuisine is incredibly rich and varied, famed for its heady olive oil; the wines are among the best produced in Italy. You will learn to cook authentic Italian dishes in an informal and friendly environment where you will learn the passion of the Italian kitchen and have fun doing it.
Recipes vary according to the season, utilizing only the freshest ingredients available and providing you with a deeply individual Italian experience. The cooking lessons are great, the food sublime!

The Menu and the italian / mediterranean recipes

Our menu are composed by 5 different courses: appetizer, first course,
second course, vegetables and dessert.
Here there are examples of the different courses.

APPETIZER
Bruschette –Tomatoes and mushrooms;
Cake with zucchine, potatoes and Taleggio cheese;
Mixed grilled vegetable with bread and garlic;
Rolled meat with wild erbs;
Spelt salad;
Salad with melon and ment;
Fry flower zucchini;
Torta al testo with ham and rucola;
Crostini with chiken liver;
Panzanella;
Frittate;


FIRST COURSE
"Pasta" made by hand (Tagliatelle, strangozzi, maltagliati, pappardelle....);
Pizza;
Gnocchi;
Ravioli;
Lasagne;
Rice;
Polenta;
Lentil soup;
Pasta and chickpeas;
Pasta and beans;
Soup with spelt;
*the souce for the pasta will be do used fresh and seasonal products.

SECOND COURSE
Umbrian Meatloaf with pine-seeds and dry graps;
Turkey with wild erbs;
Pork and grapes;
Roast chiken;
Parmigiana with egg plants;
Pork with dry plums;

VEGETABLE
Salad with fennels and rucola;
Salad with fennels and orange;
Roasted potatoes;
Roasted mixed vegetable;
Grilled egg plants;

DESSERT

Crostata (with cream, fresh fruit and jams);
Tiramisù;
Macedonia (mixed fruit) with special cream;
Panpolenta with ice cream ;
Cake with carrots;
castagnaccio;
Rocciata;
Tozzetti with holy wine
